Truth Coffee was founded in 2009. The roastery was small but they knew they needed something bigger and better. Truth wanted something extraordinary. So, in 2012, they built their Truth Café in Buitenkant Street, Cape Town, where they roast for the café alongside several clients, like Monaco Eatery, who value the extraordinary in every cup.

Truth takes roasting seriously. They know that the Maillard process is where the flavour comes from. Not enough means no delicious flavours and a grassy green taste; too much and it burns, is bitter, and loses flavour.

The trick is to develop that browning evenly through the bean, which takes relentless roasting, testing, tasting and analysis – the Truth team works on this daily using probes, computers and testing tools, even measuring the solubility of the bean with a special metre to rate the coffee. 

Truth Coffee gets a tiny bit better every week. Not just how dark, but how quickly or slowly. And each origin or farm or lot is treated individually.

Deep Dark & Twisted is an espresso blend designed for those classic coffee palates that don’t want too much acidity in the cup. And yet, this isn’t achieved through a dark Italian-style roast. On the contrary, the roast is quite light! You won’t find any of the brightness or acidity, instead, you’ll find lots of nuts, hints of biscuit and some subtle sweetness, all of which come together beautifully for a classic flavour profile without the burnt ashy taste, in a well-extracted espresso.
